I didn’t know what to expect from this recipe going into it – would it be more like a cake? Squares? Something else? The proportions had me thinking it wouldn’t yield much, but it ended up making a decent sized dessert that was more than enough to serve my family of five. And I’ve decided it’s most like cake. Next time I will try adding a glaze or serving warm alongside ice cream.

Ingredients
- 1/4 cup Earth Balance
- 1/2 cup granulated sugar
- 1/4 cup brown sugar, packed
- 2 eggs
- 1/2 tsp vanilla
- 1 cup flour
- 1/8 tsp salt
- 1 tsp baking powder
- 1/2 cup walnuts, finely chopped
- 1 medium apple, peeled and chopped (I used a Cortland apple)
- Glaze (optional)
Yield: 9-12 servings
Preheat oven to 350o.
Melt Earth balance and add sugars (I did this carefully in the microwave, but it would probably be better on the stovetop). Set aside to cool for 5 mins before beating in the eggs and vanilla.
In a separate bowl, whisk together the flour, salt and baking powder. Fold these dry ingredients into the wet ingredients. Stir in the apples and walnuts.
Bake in an 8” square pan for 30 minutes. Alternatively you can bake it in a 6×8” pan as I have to yield a slightly deeper cake but it will need 35-40 minutes. Check with a toothpick to make sure it has baked through. If glazing, you can apply the glaze while warm or cold. Serve warm or let cool before serving.
